Peanut butter is a childhood staple  in America. The popular sandwich spread is a beloved snack that is often served with jelly or jam. However, peanut butter wasn’t always associated with kids and schoolbag lunches. __1__

花生醬在美國是兒時的主食。這種受歡迎的三明治抹醬是廣受喜愛的點心,經常會配果凝或果醬一起吃。不過花生醬並非總是與小孩子跟書包裡的午餐連結在一起。花生醬在現代的流行可追溯至一間十九世紀時的療養院。

staple [ ˈstepl̩ ] n. 主食

Peanuts have been around for millennia   since they were first cultivated  by the Inca and have been eaten whole, crushed , and in paste form ever since then. However, it was John Harvey Kellogg who contributed to the popularity of peanut butter in the US. In 1896, Kellogg filed a patent for a “food compound ” that was essentially boiled peanuts that were finely ground  into a spread. __2__ Peanut butter was promoted by Kellogg as an alternative  source of protein   for vegetarians. Thanks to some notable  clients, Kellogg’s dietary   views became popular, and this contributed to a rise in the number of people consuming peanut butter.

Though peanut butter was first marketed as a healthy, meat-free food, there were several other events that would catapult  it to its current status as an American staple. In the 1920s, a chemical process called partial hydrogenation   was used to keep the oil from separating in peanut butter. __3__ Then during WWII, the government encouraged people to eat peanut butter amid meat rationing.

Nowadays, peanut and other nut butters are more processed and a lot sweeter than any version advocated  for by Kellogg. __4__ Kellogg would likely reject most of those claims, though.

1900 年代初期, 食品工業開始採用「氫化」加工程序, 目的是讓植物油的部分不飽和脂肪酸轉化成飽和脂肪酸, 以增加穩定性和保存期限, 並且更耐高溫、在室溫下會呈半固態。只不過, 這同時也可能發生不完全氫化( 又稱部分氫化) 現象, 使原本順式結構的不飽和脂肪酸變成反式結構的不飽和脂肪酸,也就是我們常說的反式脂肪。( 資料來源:灃食公益飲食文化教育基金會)
