臺灣最強平民美食 ── 滷肉飯 Lu Rou Fan: The Cheapest Ticket to Taste Bud Heaven

From beef noodle soup to lu wei, from danbing to pearl milk tea, Taiwanese love their food. One dish, lu rou fan—braised pork rice—is a cheap dish found throughout the island. A bowl of the rice usually costs around NT$35 or less. Because of this, the dish is popular with people from all walks of life.

從牛肉麵到滷味、再從蛋餅到珍奶，臺灣民眾熱愛他們的美食。其中一道料理 ── 滷肉飯（英文名為 braised pork rice），是全島上下隨處可見的便宜佳餚。滷肉飯一碗通常要價新臺幣三十五元或更少。正因如此，這道食物受到了各階層民眾的喜愛。

What’s in the dish? It’s a bowl of white rice topped with pork. Of course, the secret is in how the pork is cooked. Usually, it uses some sort of soy sauce base. Sometimes braised bamboo shoots or pickled radishes are served as toppings.

這項美食之中有什麼食材呢？它就是一碗上面配上豬肉的白飯。當然其中的祕訣就在於豬肉是如何料理的。通常滷肉飯會運用某種以醬油為基底的滷汁。有時候它還會附帶滷筍絲或醃蘿蔔等配菜。

Where did the dish come from? Some think it can be traced back several hundred years. The first Han people in Taiwan didn’t have much meat because it was hard to come by and expensive. So, most families would buy the cheapest meat available.

這道料理到底從何而來呢？有些人認為其歷史可回溯至數百年前。來到臺灣的首批漢族人可吃的肉類不多，因為肉品不但難以取得而且價格昂貴。因此多數家庭會購入他們所能買到最便宜的部位。

To make less seem like more, they diced up the less desirable pieces to make thick sauces served over rice. The result was lu rou fan, a common dish celebrated across Taiwan.

為了讓少少的肉量看似更豐盛，他們會將這些較差的肉品切丁，然後用來煮成淋於白飯上的濃厚醬汁。其產物就是滷肉飯，一道全臺上下都讚不絕口的常見料理。
