專題特寫
Dandelions aren’t just for good fortune, though. They can also be good for your health. For one, they are highly nutritious. Dandelions are loaded with vitamins A, C, and K, along with a bit of vitamin E and some B. They also contain several minerals the body requires, such as calcium, magnesium, and potassium. You can even eat the root or boil it to make tea.
Dandelions are a great source of antioxidants. As time goes by, the oxygen we breathe slowly breaks down the cells in our body. Antioxidants slow that damage and help slow down the aging process. Studies also show that dandelions can help keep blood sugar and cholesterol levels under control, too.
How should you eat dandelions to get all these great health benefits? There are many simple dandelion salads you can make at home. Dandelion greens with red pepper, cheese, and butter have a nice, spicy flavor. If you don’t like it hot, replace the red pepper with black. Sautéed dandelion greens also go well with eggs. Bon appétit!
