Many varieties of coffee beans are grown around the world, but the process of preparing coffee is generally the same everywhere. The preparation of the beans, particularly the roasting process, is the primary factor that determines the strength and flavor of the coffee.
The roast level of coffee beans is categorized into four color groups—light, medium, medium-dark, and dark. In general, lighter roasts tend to be more acidic, while darker roasts are more bitter. It is a common misconception that darker roasts have a higher caffeine content. In fact, lighter roasts have a higher concentration of it.
