When it comes to Mexican food, most people go for tacos, burritos, or maybe a plate of tortilla chips and salsa. But if that’s all you know about Mexican cuisine, you’re missing out. For those in the know, the quesadilla must come to mind.
So what is a quesadilla? It’s a corn tortilla that is filled with cheese and meat such as beef, pork, or chicken. A selection of vegetables, a few herbs, and some sour cream are added as well. With these additions, you’ll get a variety of flavors.
Quesadillas have been around since the days of the Aztec Empire in the 16th century. Back then, quesadillas were stuffed with pumpkin and squash, and then baked in clay ovens. The Aztecs must have played an important role in the spread of quesadillas because today, this kind of food can be found in the appetizer section of restaurant menus throughout North America. There is even a National Quesadilla Day, which is held yearly on September 25. If you’ve never tried this Mexican food, there’s no better time to take a bite.

1. must 後面接「have + 過去分詞」時，用來表示 「對過去事情的推論或猜測」，指「一定/必定曾 經⋯⋯」，表達說話者推測過去某件事必定已經發生 (本文即屬此用法)。
例：The street is wet. It must have rained last night.
街道是溼的。昨晚一定下過雨了。
2. must 之後接原形動詞，表示對現在或未來的推測， 指「一定/必定(是)⋯⋯」。
例：It must be Dave calling. I’ll get it.
